Vegan Low Fat Curry Recipe
2 C. dried red lentils
1 head of chopped cauliflower
1 C. cilantro
1 chopped onion
3 cloves of garlic
1/2 tsp ground coriander
1 tbsp. ginger (fresh is always best)
3 TBSP. red curry paste
1/4 tsp. cardamom
1/2 tsp red pepper
1 tsp salt
1 tsp turmeric
1 tsp curry powder
1/2 tsp cumin
1/2 c of lite coconut milk
1 15 oz fire roasted diced tomatoes
3 cups water ( or a 1/2 c. more until just covered with water)
Place the lentils in a large crockpot. Add the onions, garlic, cauliflower, ginger, curry paste, salt, turmeric, coriander, cumin, red pepper, and cardamom, then stir to combine.
Pour the tomatoes and 3 cups of water over the ingredients in the crockpot. Cover and cook on high for 4 hours or low 8 hours.
Just before serving, stir in the coconut milk and cilantro. Serve over rice and garnish with more cilantro. Feel free to adjust the seasonings. This a mild curry, so add more heat if desired.
