Hope you enjoy this recipe for vegan buttermilk pancakes. They’re gluten free, oil free, no added sugar and delicious!
You can use normal flour if you aren’t gluten free, this will make it even extra fluffy, try spelt flour! Gluten free flour that works great though is buckwheat.


1 + 1/2 cup gluten free flour
1 tsp baking powder
2 tsp apple cider vinegar or lemon juice
1 + 1/2 cup soy milk (start with 1 cup then add the half when mixing as needed)
1 banana – optional or use another sweetener if desired
1 tbsp flax meal + 2 tbsp water
1 tsp vanilla extract

– Blending all the ingredients will make it much easier and faster 🙂
– I use a non stick pan, the brand is RACO. If your pan isn’t non stick then you’ll need to use oil or spray.
