About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the YouTube channel Pailin’s Kitchen.

As a person who has lost 96 lbs (going from 230 lbs to 134 lbs, standing at 5'6"), using a low carb diet, one of the things that I miss most is noodles. It is nice to have this low carb substitute. I can finally have noodles again, without feeling guilty. Thank you!
Unfortunately, I didn't have any fish so I used some peanuts for protein, still the curry sauce was delicious. I used stir fry vegetables to accompany the noodles. Thank you for this recipe. 🙂

I actually bought Shirataki noodles out of curiosity and then found this recipe. The sauce really is delicious, very very rich and full of flavor, though I have to say the noodles themselves made me go a little bit sick, the really have no taste at all, but the consistency is like slimy and springy at the same time…makes me shiver thinking about it. Anyway, after managing to get the Shirataki noodles down there was still a lot of sauce left, so to calm down my stomach I made some Somen noodles and ate a little bit of the sauce with it, which was really nice. Thanks for the recipe!
