Recipe for 4 Ingredient Healthy, Low Carb Beef Stroganoff with Mushrooms & Sour Cream

I saw this recipe in the Diabetic Cookbook and had to fix it last night for dinner. I was trying to do Super Bowl dishes BUT this looked to good to pass up. As I was fixing it, I realized that you could use this for the Super Bowl by making meat balls and cooking those in the sauce. This is so good. I loved it and I know you will too.   • hi hi debbie…!!! that looks so good lol although i am not a big fan of brussel sprouts lol… for the ones that are rude here in the comments they can just stop… shes doing good and it is working for her so let it be… she has too find the way that works for her and makes her happy and this is it for her i am just glad she is is better and happy…..

  • Looks great to me Debbie. I have no problem myself with the carbs that are in the meal. After all not all carbs are bad. But everyone is entitled to their opinion. You made me hungry. LOL Hugs from Bama.

  • low carb? sure if you are going by ADA/SAD diet…once again 6 (six) sprouts = 5 NET carbs and that is about 3×6 there…I'm guessing around 10 oz. or better =about 17 NET carbs….since most don't bother to do a rise test, guess I am still wasting my time trying to explain it ……

  • you had me hooked until you mentioned brussel sprouts. gross yucky is my opinion. So I would do carrots and peas.  The meat ball version would be even better than the patties as they would absorb the flavours more. 🙂

  • I would rather have you use real onion instead of onion soup mix, and ya know my reasons for it. Even the canned mushrooms rather have fresh mushrooms because of the salt. Fresh is best. The less you can get away with using any unpronounceable chemicals is to. Even the worchestershire sauce I have no problem with because I can actually pronounce the ingredients:  distilled white vinegar, molases, water, sugar, onions, anchovies, salt, garlic, cloves, tamarind extract, natural flavorings, chili pepper extract. Contains anchovies. But ya see what dry onion soup mix has got in it Debbie –   Onions (deyhydrated), salt, cornstarch, onion powder, sugar, corn syrup, hydrolyzed soy protein, caramel color, partially hydrogenated soybean oil, monosodium glutamate, yeast extract, natural flavors, disodium inosinate, disodium guanylate. That Daisy sour cream we don't have in Canada put have similiar I looked at the ingredients of their regular and light and have no problem with either:  Any way. Looks good. Have made meatballs and served with a homemade mushroom sauce before, really good with egg noodles. Which I know we not supposed to eat many of those. No Yolks about it. LOL.  I know I am being a nag about the chemicals that are in processed foods, but I am really finding the more I can cut that chemical  stuff out of my diet the better I feel. I just put that small turkey in the oven. So be having a wee bit of turkey tonight and I don't know what else yet. Would love some steamed brussell sprouts. They so expensive here this time of year and the ones that come in from elsewhere don't look as nice as the local ones that come in June.
