Pepper Steak Ole, quick, easy dinner, 3 WW points per serving, Low Calorie, healthy, very filling.

Quick, easy dinner, WW (Weight Watchers) low points Pepper Steak with Cauliflower Rice in less that 30 minutes. Recipe makes 2 large servings and only 3 WW (Weight Watchers) points each. My husband says this is his new favorite dinner, I hope you enjoy it.
INGREDIENTS:
* 4-5 ounces of lean sirloin steak (trim off all fat)
* 1 can of Rotel tomatoes original with green chilies, 10 oz size can
* 1/2 bell pepper
* 1/2 onion
* 1 tbsp cornstarch
* 2 tbsp of cold water
* garlic salt
* salt and pepper to taste
* Green Giant Cauliflower Rice
DIRECTIONS:
* Slice the steak into strips and then slice in half. Slice bell pepper and onion. Put steak, peppers and onions into a gallon size zip lock bag. Add 1 can if Rotel Original tomatoes. Seal and mix bag around with your fingers. Put it in the refrigerator and let it marinade for an hour.
* Heat a large skillet on high and add all the ingredients from the zip lock bag. Sprinkle with garlic salt. Stir, then cover and continue cooking on medium heat for around 15 minutes until steak is done.
* Turn down the heat to low. Using a fork, whisk 1 tbsp of cornstarch to 2 tbsp of “cold” water. Pour over the pepper steak and stir, add salt and pepper to taste. Cook for less than a minute. DONE! Only 3 points per serving.
* Steam cauliflower rice in the bag in the microwave for 5 minutes. Spoon cauliflower rice onto two plates (divide equally). Spoon pepper steak over the cauliflower rice (divide equally for two plates). -0- points for cauliflower rice.
