1kg Klein Karoo Ostrich Mince
2 sweet potatoes
1 cauliflower head
1cup chopped mushrooms
1cup chopped onions
1cup frozen vegetables
1tbs chicken stock
1-2 garlic cloves
2tbs mixed herbs
3 egg whites
Cherry tomatoes for garnish


Pre-heat oven to 190°C
In a large pot add the onions and garlic to some water that is just coating the surface and saute until softened
Add the Ostrich Mince and cook on high until the mince has browned
Next, add the mixed herbs, mushrooms and frozen veg. Give it a good mix, and leave to simmer for 5-10 minutes for the heat to cook through
Add the chicken stock and cook for a further few minutes.
To assemble the dish, place the mince mixture into an oven proof bowl and add the egg whites giving it a good stir, which will then bond all the ingredients together before it goes into the oven
Next, top with the sweet potato and cauliflower mash and add the cherry tomatoes on top for ganish
Place in the oven and cook for 10-15 minutes or until brown
