Gajar ka Halwa
Serves 5-6
Recipe in English:

Ingredients:
-Gajar (Carrots) 1 kg
-Desi ghee 1 tsp
-Kaju (Cashew nuts) 2-3 tbs
-Badam (Almonds) 2-3 tbs
-Doodh (Milk) ½ litre
-Desi ghee 2-3 tbs
-Jaifil powder (Nutmeg powder) 1/4 tsp
-Elaichi powder (Cardamom powder) 1 tsp
-Canderel 2 & ½ tbs
-Khoya 2-3 tbs

Directions:
-Grate carrots (thick & long shreds) with the help of the garter & set aside.
-In wok, add desi ghee and let it melt. Add cashew nuts, almonds and fry for 1 minute. Set aside for later use.
-In wok, add carrots and milk. Mix well and cook on medium low flame for 18-20 minutes and keep mixing in between.
-Add desi ghee, mix well and cook on low flame for 6-8 minutes. Keep mixing in between.
-Add nutmeg powder, cardamom powder and mix well.
-Add half quantity of fried nuts (reserved for garnishing) and mix well.
-Add canderel and mix well.
-Turn off the flame. Add khoya and give it a good mix.
-Garnish with khoya, dry nuts & serve!

Ajza:
-Gajar (Carrots) 1 kg
-Desi ghee 1 tsp
-Kaju (Cashew nuts) 2-3 tbs
-Badam (Almonds) 2-3 tbs
-Doodh (Milk) ½ litre
-Desi ghee 2-3 tbs
-Jaifil powder (Nutmeg powder) 1/4 tsp
-Elaichi powder (Cardamom powder) 1 tsp
-Canderel 2 & ½ tbs
-Khoya 2-3 tbs

Directions:
-Gajar ko garter ki madad sa kadukash ker lein or side per rakh dein.
-Karhai mein desi ghee daal ker melt karein, kaju aur badam daal ker 1 minute k liye fry ker len. Baad mein use kernay k liye side per rakh dein.
-Karhai mein gajar aur doodh dal ker achi tarha mix karein aur darmiyani halki ancch per 18-20 minutes k liye paka lein aur beech beech mein chamcha chalatay rahein.
-Desi ghee daal ker ache tarha mix karein aur halki ancch per 6-8 minutes k liye paka lein. Beech beech mein chamcha chalatay rahein.
-Jaifil powder aur elaichi powder daal ker achi tarha mix karein.
-Fried nuts ki half quantity daal ker achi tarha mix karein aur baqi ko garnishing k liye reserve ker lein.
-Canderel daal ker achi tarha mix karein.
-Chulha bund ker dein aur khoya daal kar mix ker lein.
-Khoya aur dry nuts se garnish ker k serve karein!
