2 medium beetroots, quartered
2 medium cucumbers, quartered
2 inch ginger, roughly chopped
4 stalks celery
14-16 fresh mint leaves
Juice of 2 lemons
1. Pass beetroots, cucumbers, ginger, celery stalks and mint leaves through a juicer and collect the juice in a jar.
2. Add lemon juice and mix.
3. Pour into glasses and serve immediately.
