Indian Malabar Chicken Curry | Ketogenic | Low Carb

Malabar Chicken is a great keto recipe as it is high in fat and it has, loads of coconut and coconut oil. It has curry which can be eaten with cauliflower rice or in a lettuce wrap like I did.

Makes 4 servings

Each serving:

For the marination:
800 gms Your Choice of Chicken( I used Boneless Skinless Chicken thighs)
½ tsp Turmeric
½ tsp Salt

For the Masala:
1 ½ Tbsp Coconut Oil
½ Cup Onions
1 tsp Fenel Seeds
1 tsp Peppercorns
½ tsp Turmeric
1 tsp Chili Powder
1 Tbsp Garam Masala
1 Cup Desiccated Coconut/Unsweetened Coconut flakes

While Cooking:
2 Tbsp Coconut Oil
½ tsp Mustard Seeds
10 Curry leaves
1 Dry Chili
1 Tbsp Gralic Paste
3/4 tsp Ginger Paste
Ground Masala
Marinated Chicken
2 Cups Water
Salt to taste
Lime Juice

For the Tempering:
1 Tbsp Coconut Oil
½ tsp Mustard Seeds
5-6 Curry Leaves
½ tsp Chili Pdr
