How to make a healthy, low calorie Yaki Soba stir fry
Annie Chun’s soba noodles (cooked or purchased pre-cooked)
4 oz Chicken breast, cooked and sliced
3 oz mushrooms, chopped
2 scallions, chopped
1 tbs garlic, minced
1 tbs ginger, grated
Nonstick cooking spray
1 tablespoons Braggs liquid Aminos
1 tbs rice vinegar
1/8 cup water
1 tsp Truvia
Mix: Liquid Aminos, rice vinegar, 1/4 cup water, 1 tsp truvia in a small bowl and set aside.
Spray wok with non-stick if not already non-stick coated.
Get wok as hot as possible and add green onions, garlic, ginger. Sauté for about a minute, releasing flavors.
Add chicken and mushroom until softened and cooked.
Add sauce, reduce heat to simmer. Add noodles, mixing in with vegetables, stir fry until thoroughly cooked; serve hot!
Optional: serve with Sriracha or Sambal garlic hot sauce.
