How to make a delicious low-fat bread pudding

Bread Pudding

6 cups whole wheat bread
2 cups skim milk
6 eggs (egg whites)
1 diced apple
1/2 cup cran-raisins
1/2 cup golden raisins
1/2 cup brown sugar
1/2 cup white table sugar
1 tsp nutmeg
1 tsp cinnamon


Tear the bread up into quarter size pieces and place into a bowl. It’s good to leave the bread out overnight if possible. Set aside.

Pour two cups of skim milk into a large mixing bowl. Add the egg whites, brown sugar and white table sugar. Whisk the ingredients together then add the nutmeg and cinnamon. Lastly, add the fruits and whisk.

Combine the wet and dry ingredients in one bowl and mix until the bread is moist. Once the bread is moist, pour everything into a pan greased with low-fat cooking spray. You can sprinkle a little sugar and cinnamon on top if you wish.

Cook in the oven at 350 for 35-45 minutes.
