High Protein Vegetable Soup Recipe

This is a one pot, super healthy and dangerously delicious vegetable soup recipe. Lots of protein from the beans and the quinoa. Easy to make and eat throughout the week, or freeze for later. The best part about this soup is it’s easily changeable. Don’t like mushrooms? Don’t add them! I added my favorite vegetables, mushrooms, kale and squash. Enjoy this wonderful soup on a chilly fall evening!
