High Protein, Low Calorie | Vegan What I Ate In A Day

I ended up eating ~1300 calories and ~60 grams of protein. I hope some of my meal choices inspire you!

Breakfast: 00:40
More like intermittent break-fasting, am I right?

Lunch: 01:10
Protein Packed Rice Bowl
• 2 cups kale
• 1/2 cup cooked rice
• 1/2 avocado
• 1/2 field roast sausage
• 4 oz sauteed mushrooms
• 7 cherry tomatoes, cut in half (or however many you want)
• half a lime (optional)
• hot sauce (not optional)

Snacks: 02:48
• 1 gala apple
• 2 clementines
• 28g cashews

Dinner: 03:03
Very Very Lazy General Tso’s Tofu
• 12 oz firm or extra firm tofu (pressed to death)
• 1 tbsp corn starch (or arrow root powder if you roll that way)
• 3 quick sprays of cooking oil
• 2/3 cups store bought general tso’s sauce
• 1 cup cooked rice (divided between two bowls)
• 12 oz steamed broccoli (divided)
• 1 tsp sesame seeds (divided)
• green onion/scallion (optional)

Late Night Snack: 05:43
• 1 slice
