  • 1 tablespoon vegetable oil
  • 14 oz chicken broth
  • 2 cups low fat milk
  • 1 finely chopped onion
  • 6 cups chopped green cabbage
  • 8 oz cooked ham or bacon (or any other cooked meat)
  • 2 peeled chopped carrots
  • Salt and black pepper, to taste

Put the butter / margarine and oil in to a heavy pot over a medium heat. Add the onions, cabbage, carrots and cook them until it begins to soften, stirring occasionally. Chop all the meat and add it to the pan – continue stirring occasionally.

Chop up the potato (slicing it can be nice) and make some pieces very small so they disintergreate and thicken the soup. Add them to the soup with the milk, salt and pepper. Warm the soup through, don’t let it boil and then serve it.
