Healthy Blueberry Breakfast Muffins (OH MY!)

Blueberry breakfast muffins
Preparation time: 10 minutes
Cooking time: 20-30 minutes
Yields: 12 muffins

Ingredients:

2 cups rolled oats
1 tsp baking powder
½ tsp baking soda
2 bananas
2 eggs
¾ cup plain yogurt
3 tbsp coconut oil, melted
¼ cup honey
1 tsp vanilla extract
½ tsp orange zest
1 cup frozen or fresh blueberries

Directions:

Preheat oven to 350 ºF.

In a food processor add the rolled oats, baking powder and baking soda and grind to fine powder.

Transfer in a large bowl and set aside.

In the food processor add the eggs, yogurt, coconut oil, honey, bananas and vanilla extract and blend until smooth. Add the wet ingredients to the dry ingredients and mix until just combined. Add the orange zest and mix. Gently fold the blueberries into the batter.
Line a muffin tin with paper cups. Divide the batter evenly among the muffin cups. Bake for 25-30 or until a toothpick inserted in the middle comes out clean. Cool slightly and serve.
