Egg & Veggie Muffins
12 eggs (egg whites can be substituted)
12 mushrooms, sliced
1/4 onion chopped
1/4 large green pepper chopped
1 cup spinach chopped
18 cherry tomatoes, sliced in half
Salt and pepper

Beat eggs, add chopped spinach, salt and pepper. Saute mushrooms, green peppers and onions in a non-stick skillet (no oil needed). In greased muffin tin, or even better a silicone muffin tin, put 1/4 cup egg mixture, add teaspoon of sautéed veggies, top with 3 cherry tomato halves. Bake in 350* oven for 20 minutes.

  • got em in my oven now. cant wait to try these baybeees out. didnt have mushrooms so i just used bell pepper,tomato,onion and kale,brussel sprouts. Vegetables are vegetables so it really doesnt matter which ones u use; right? I havent had an egg muffin in a yr !!!. Is this too much veggies I added?

  • Thanks Lisa. They look very healthy, and yummy. I will make them this week. I have aluminum foil muffin cups- I wonder if they would stick less in those. My least favorite part of baking and cooking is cleaning the pans!!!

  • They look great but a lot of work.  I make something similar but in the crockpot.  I usually add potatoes and cheese but I'm going to experiment with just making them with eggs and veggies.

  • This is a great recipe Lisa my hubby is diabetic and always looking for carb free foods for him I could make these ahead also and he could use them for breakfast or lunch he's also trying to shed a couple pounds but he really doesn't need to he's 6 ft. Tall and is about 185 or 190 but you know how u feel when u put on ur pants and they start feeling to tight and that's where he is right now. If he drops 10 lbs. he'll be happy.
