Easy Spicy Tomato Soup : a low calorie, low fat, spicy tomato soup.
Just because a soup is good for you doesn’t mean it has to be boring. This is so full of flavour that you will want a second serving – so have one! It certainly won’t cause weight issues- But watch the chillies!
2 x Red Peppers
12 oz Plum Tomatoes
3 Cloves Garlic
1/2 Finger Chilli (to taste)
Handful Green Beans
4 Spring Onions
Glug of Olive Oil
Roughly chop the Spring Onions, Tomatoes, Peppers, Green Beans, Celery. Heat up the oil in a pan, add the chopped ingredients and cook for a few moments. Add the crushed Garlic and finely chopped chilli and fry gently for a further couple of minutes.
Remove the pan from the heat add, seasoning, herbs, stock cube and water to cover. Return to the heat and simmer for up to twelve minutes.
Blend until you have the desired consistency. I prefer this soup to have bits in it.
If overtaken by naughtiness add a sprinkling of cheese when serving. A good dollop of low fat yogurt really add something to this soup!
