6 OVERNIGHT OATS – Day 1:

Salmon & Lentils Recipe:

1 cup French Green Lentils
3 cups water

boil down 15-20 minutes

Oil a pan on medium heat
add 1/2 cup chopped onions
saute 1-2 min. Then add
1/2 cup chopped carrots
1/2 cup chopped celery
1/2 tsp dried thyme

cook 2 min then add

cooked lentils
1 clove minced garlic
2 tbsp dijon mustard
salt & pepper to taste

stir and add
2 cups baby spinach
squeeze of lemon juice.

Saute and set aside

Season salmon fillets with salt & pepper
cook 2 4 oz. salmon fillets (wild caught) in a pan with olive oil, skin side down first for about 5 minutes. flip and finish cooking another couple of minutes.

Serve over lentils or a salad.
