Some tips to improve the recipe.
1. Cook the dark neat and white meat separate. The breast is white mean and the other parts are the dark meat. White meat gets dry very fast so you have to cook it for a shorter time. However dark meat tends to be more resilient to heat and gets more tender the higher its internal temperature rises.
2. To aid in temperature control USE A MEAT THERMOMETER. It is the BEST way to judge doneness. White meat should be at least 164 Fahrenheit. (The internal temperature will rise to 165 Fahrenheit off the heat) however dark meat is usually better enjoyed at a higher temperature like 175 or more.
3. Maybe mix your masalas in a bowl with the water and some flour. Use it as a batter and fry it. It will better adhere to the chicken and get crispy. Also, use more oil to cook the chicken. The extra oil doesn't do much harm and makes the chicken crispy.
3. Preheating the pan before adding the oil is risky. When the cool oil suddenly hits the hot pan it can pop, shooting hot drips of oil everywhere. Standing close to the pan while drizzling the oil puts you at a risk to be git by said oil. Add your oil before the pan is hot. At least you can judge when the oil has started to overheat. I.E if it is bubbling.
5. When plating maybe add a salad as a side. Raw or cooked. And plate with at least some fresh herb. If you ask me fresh mint would suit this the best.

A few additional things for beginners..
1. Before cooking, make slits into the chicken pieces and marinate them for 10 to 15 mins with ginger garlic paste.
2. Then on Medium flame add oil. Once oil is heated then add the marinated chicken and continue with Paaji's recipe.
The reason that's important is coz.. ginger and garlic burns when added to the oil directly and looses all its flavour also spluttering on you.
The slits save that flavor and also make sure the spices enter the chicken and are juicy and tasty at the end of it all.
Learnt it the hard way during my initial cooking years.

Brother I just love your recipes and your style of describing the requirements of each ingredient in a recipe. But, I want to suggest you one thing that might be a little out of the topic but essential for you; I can see in this video that your 'Kadhai' is losing its non-stick coating , if you keep on cooking on that Kadhai, it might harm your health as that non-stick-layer-particles are very very very bad!…. So for your health, I would suggest that you should change that Pan. Hard Anodised cookware is a great choice instead. Stay blessed and healthy bhai and I love your channel π
