Passive Time 15 minutes
2 cups (160g) Quick Oats
1 Medium (118g) Banana
2 Scoops (64g) Chocolate Protein Powder
2 Large (100g) Eggs
1/2 Cup Unsweetened Apple Sauce
1 Cup Unsweetened Almond Milk
2 Tsp Baking Powder
1 Tbsp Ground Cinnamon
1/2 Tsp Salt
In a large bowl add the dry ingredients: 2 cups of quick oats, 1 medium banana, 2 scoops of chocolate protein powder, 2 tsp of baking powder, 1 tbsp ground cinnamon, and 1/2 tsp of salt. Mix dry ingredients together
Next, you are going to get a smaller bowl and add 1 medium banana. Go ahead and smash the banana. Add 2 eggs to the bowl. Add 1/2 cup of unsweetened apple sauce to the bowl. In a protein shaker bottle add 1 cup of almond milk and add the 2 scoops of protein and shake. Add the mixture to the bowl and mix all the ingredients together
Add the wet ingredients to the large bowl with the dry ingredients. Mix all ingredients together.
Take out a muffin pan and coat with a nonstick cooking spray or add a cupcake liner. Add 1/2 cup of the mixture to each muffin cup tray. I was able to make 8 muffins in total.
I am using an Air Fryer for this recipe but you can also use a conventional oven. I put mine in the air fryer for 15 minutes at 375F. Take the muffins out once they are crisp.
This is optional but you can add chocolate chips to the top of the muffins before putting them in the air fryer or oven.
Take them out a let them sit for a few minutes. You can store them in a meal prep container for up to 3 to 4 days or freeze them.
