Hey – I have finally been able to create a mini-series, showing you 5 different meal ideas for breakfast, lunch, dinner and dessert. I have sourced inspiration for these recipes from either online or from a Slimming World recipe book (both linked below).

I hope you enjoy these dinner ideas – each recipe has been rated depending on how easy I thought they were to make and also how tasty I thought they were. This is based on my experience and personal taste. My personal favourites are the steak ramen and the pizza topped chicken.

Steak Ramen
Syn Free
6x garlic cloves
3cm fresh ginger
1 tsp chilli paste
2 tbsp red wine vinegar
1 tsp sweetener granules
4 tbsp oyster sauce
500g lean rump steak
250g dried medium egg noodles
1 broccoli head
1L beef stock
2 tbsp dark soy sauce
250g pak choi
4 spring onions

Super tasty and relatively simple considering the flavours you get! Ready in about 30 mins and serves many.

Provencal Vegetables & Grilled Chicken
Syn Free
3x medium onions
500g beetroot
3x large courgettes
400g canned artichoke hearts
150g cherry toms
400g canned green lentils
3x chicken breasts

Great accompaniment to any protein source – would also be nice served cold/next day. Great for meal prepping as you can make a big batch and portion these up for lunches the next day etc.
Mushroom Macaroni
Syn free
30g dried porcini mushrooms
400g mini portabello or chestnut mushrooms
3x garlic cloves
2x tsp fresh thyme leaves
500g dried macaroni
1L vegetable stock
200g plain quark
3 tbsp fresh parsley

I love this recipe. It’s super simple and quick to make and yet surprisingly cheesy!

Pizza Topped Chicken
Syn Free (if using your HexA)
Ingredients (ingredients serve 1):
½ small red onion, chopped
½ red pepper, chopped
1 small garlic clove, crushed
1 tbsp stock
2 vine tomatoes, skinned and chopped
1 tbsp canned chopped tomatoes
1 tsp tomato purée
1 tsp oregano
1 skinless boneless chicken fillet
Low-calorie cooking spray
40g reduced-fat Cheddar, grated
1 cherry tomato, halved
Fresh basil, roughly chopped

Where have I been with this?! I would consider this a classic meal you see posted on Instagram yet I had not tried it. Unsure why – it is amazing! Changes up your usual grilled chicken, definitely a comfort Friday meal!

Roast Chicken Dinner with Stuffing
1 syn per portion
Ingredients (serves 4):
Potatoes, peeled and cut into chunks
Low calorie cooking spray
1 tsp dried mixed herbs
4 skinless chicken breasts
Carrots, peeled and cut into batons
Tenderstem broccoli florets
Frozen peas
4 level tsp gravy granules
For the stuffing balls:
Small handful of finely chopped fresh herbs, such as sage or parsley
1 egg, beaten
Finely grated zest of ½ unwaxed lemon
300g lean pork mince (5% fat or less)
