Don’t worry though, momma Cheng has you covered with 3 high protein, fairly low carb, vegan breakfast ideas! I’m truly obsessed with all of them, and I think you will be too.
Breakfast #1: Tofu Scramble
17 grams protein
Ingredients:
⅓ block extra firm tofu
5-6 Boiled baby potatoes
¼ c red onion
Big bunch of kale (it shrinks as you cook it)
Sauce:
½ tsp salt
1 tsp garlic powder
½ tsp turmeric
¼ tsp chili powder *SPICY*
1 tsp cumin
1-2 tbsp water
Breakfast #2: Tempeh Brussel Sprout Hash
16 grams protein
Ingredients:
⅓ block tempeh
¼ c red onion
~ 8 brussel sprouts
1/2 avocado
Sauce:
2 tbsp balsamic vinegar
1 tsp garlic powder
½ tsp paprika
1 tsp dijon mustard
1 tsp maple syrup
Breakfast #3: Chia Overnight Oats
16 grams protein
Ingredients:
½ cup nut milk
¼ c oats
2 tbsp chia seeds
1 heaping tbsp peanut butter
1 tsp maple syrup
Toppings:
Anything! Berries, kiwis, sliced almonds, hemp seeds, coconut flakes, etc etc

Your first two two recipies look tasty but something I would probably eat at lunch …. not breakfast.
Stop using white salt!!!
It's got only 2 minerals in it and it's refined……
Go for celtic salt it has 82!!!!! Minerals
OR Himalaya salt wich has around 70 …..
And oil in a NON STICK pan is quite the oxymoron…..

Ahhh thanks Beverly!!! I love the tofu scramble! I’m sceptical about the tempeh though! I bought some tempeh bacon and reaaalllyyy disliked it, but maybe I’ll give this a whirl? 🙈💜
Girl: drop the oats and just make a protein chia pudding for a higher fat/lower carb option. It also works as dessert. I use either milk (whatever you like) or get fancy and use some coconut cream (oh my dayz), chia seeds, a lick of honey (or maple syrup of stevia drops etc etc etc whatever) and vanilla protein (you literally don't taste it) and just sit it overnight in the fridge like you do with the oats. Top with toasted nuts, cinnamon, a piece of fruit… whatever x
