Super simple healthy sweet treats that you can keep in your freezer and your fridge to grab when you get that sweet tooth caving an not feel guilty about eating something sweet!

CHOCOLATE CHIP SWEET POTATO MUFFINS:
1 MUFFIN:

INGREDIENTS:
o ½ cup cooked, mashed sweet potato (approx. 1 medium)
o ½ cup mashed banana (approx. 1 medium)
o ¼ cup nut butter (your choice I used peanut butter)
o 2 eggs
o cinnamon to taste
o OPTIONAL you can add dark chocolate chips, fruits, nuts, chia seeds,etc
INSTRUCTIONS
o Smash the sweet potato and banana together in a small bowl
o Add the peanut butter, eggs, and cinnamon and make sure to mix well
o Stir in additional mixes
o Spoon into greased mini cupcake pan
o Bake at 375 degrees
o I chose to top mine with whip cream to just make it a little extra sweet

REESES PEANUT BUTTER CUPS:
1 CUP:

INGREDIENTS:
o 1 cup PB Fit Powder
o 1 Cup of water
o ¾ cup dark chocolate chips
o ¼ cup almond milk
INSTRUCTIONS:
o Line mini cupcake pan with mini cupcake liners.
o Add the dark chocolate chips to a microwave safe bowl and microwave in 15 second intervals until fully melted. Gently stir in the almond milk until you have a creamy chocolate ganache consistency
o Distribute the mixture evenly among the cupcake liners, place the plan in the freezer for a few minutes until the first layer becomes hard
o Combine the PB Fit powder and the water until you have a creamy peanut butter texture (will be a but runnier) Pour the PB into each cupcake liner to create another layer on top of the solid chocolate. Put back into the freezer for 30 min or until the PB is hard
o Add the second batch of the melted chocolate into the cupcake liners on top of the PB (this is your last layer) then you will place back into the freezer until the PB cups are FULLY frozen
