Vegan Sweet Potato CURRY – LOW FAT

FULL RECIPE & INSTRUCTIONS:
120g white rice
2 sweet potatoes
1 cup frozen peas
3/4 bag frozen spinach
1 can of beans (I used Cannellini beans)
4 tsp curry paste
1 tsp garlic powder, 1 tsp chilli powder, 1 tsp turmeric (I added a TON more, only because I am crazy about turmeric), 1 tsp pepper, 1 tsp salt
1 cube for the veggie stock – make sure it’s VEGAN, not all of them are!
1. Add rice and 3 cups of veggie stock, boil and let it simmer for 5-10 minutes.
2. Add potatoes + beans and simmer for 15 minutes.
3. Add rest of the veggies + curry paste & seasonings and simmer for another 5-10 minutes.
4. Serve! 🙂
