Low Fat Banana Muffins | Only 100 kcal each | Simple & Healthy
They’re are so fluffy and moist, I bet no one can guess they’re actually a healthier option. They’re easy to make, too, with basic ingredients and only one mixing bowl! Feel free to add mix-ins of your choice, like chocolate chips or toasted nuts.
– 70g of honey
– 2 eggs
– 3 ripe bananas
– 1 tsp baking powder
– 150g white whole wheat flour
– 20g oats
– 1 tsp stevia
Preheat oven to 325F/ 165C. In a large bowl beat honey and eggs together with a whisk. Mix in mashed bananas, followed by the baking powder. Add the flour, stevia and oats to the bowl and mix with a large spoon, just until combined. If you’d like to add any additional mix-ins, like nuts, chocolate or dried fruit, fold them in now. Divide the batter evenly between muffin cups, filling each cup about two-thirds full. Sprinkle the tops of the muffins with a small amount of blueberries. Bake muffins for 25 minutes and enjoy!
