How to make healthy Zucchini Pancakes at home. Fun and flavorful, these rustic veggie pancakes make a wonderfully versatile side dish or a healthy breakfast. They’re also a great solution for what to do with all your extra zucchini. These pancakes are unbelievably easy to make, low calorie, and the perfect way to sneak in some veggies! This recipe is easy and they taste crazy good; especially with sour cream. I love this recipe because its so healthy and filling.

We will need:
– 1 onion
– 1 zucchini
– 2 carrots
– 1 egg
– 3-4 tbsp of flour
– salt and pepper

Directions:
Step 1: Chop your onion finely and then fry them on medium heat until they get a bit of colour.
Step 2: Grate your carrots and zucchini and place them in a large bowl.
Step 3: Add 1 egg and mix. Then add your onions and flour. Season well and mix together until everything is incorporated.
Step 4: Preheat your pan with some oil or butter and place 1 tsp of mixture and shape into a round pancake shape.
Step 5 : Fry them on low-medium heat until golden brown.
Step 6 : Enjoy 🙂
