How To Make Baked Oatmeal- Healthy and Delicious Recipe

Baked Banana Blueberry Oatmeal
1C Old fashioned rolled oats
1/4C Chopped walnuts, pecans or almonds
1/2 tsp Baking powder
3/4 tsp Cinnamon
Pinch of sea salt
1/4C Pure maple syrup
1C Unsweetened vanilla almond milk
1 Large egg (lightly beaten)
1 tsp Vanilla extract
1-2 Bananas
1/2- 1C Blueberries or any fresh fruit
Preheat oven to 375*F
Lightly spray baking dish with cooking spray. In a medium sized bowl, mix the oats, half of the nuts, baking powder, cinnamon and salt. Mix well to combine. In another bowl add in syrup, milk, egg, vanilla.
Spread the sliced bananas on the bottom of the baking dish. Top with the fruit. Spread the oat mixture over the fruit. Pour the liquid ingredients next over the oat mixture.
Sprinkle the remaining nuts and berries over the top. Bake for 30-35 minutes or until the top is browned and the oats set. Let it cool before serving. I keep mine in stored in the refrigerator.
