Guilt Free Food – Mexican Tortilla Cups

I love flexible dieting and making healthy food that is delicious, tasty and guilt free. Here is some home made Mexican tacos using some tortilla wraps that are healthier and much better tasting.

Serves 4 people

450g Boneless Skinless Chicken breast
1 tin Chili beans
1 Onion
1 tsp Garlic Paste (or crushed garlic)
1 packet Taco Seasoning Mix
4 x Tortillas (Spinach or wholemeal)
1 Bag (200g) Broccoslaw or salad mix
Guacamole (Optional)
Grated Cheese (Optional)
Sweet Chilli Sauce (Optional)

If you want to have a lower calorie option, then feel free to skip the rice, guacamole and cheese. You can use low fat cheese and low calorie seasonings as you like.
